Chiara Bella Italian Amaretti Cookies

Soft or chewy Italian Amaretti/Amaretto Almond cookies are a great way to enjoy friends and family for the holiday.

Ingredients

  • 1 large egg

  • 1/2 cup granulated sugar

  • 2 tsp Amaretto liqueur

  • 1/2 tsp real almond extract

  • 1 3/4 cups almond flour or finely ground blanched almonds

  • 2 tbsp. all-purpose flour or gluten-free flour

  • 1/4 tsp baking powder

  • 2 tbsp. powdered sugar for dredging

  • almonds or maraschino cherries for topping optional

Instructions

  1. Preheat oven to 325 degrees F and line a baking sheet with parchment paper.

  2. In a large bowl, beat the egg and sugar. Stir in the Amaretto and almond extracts.

  3. Add the almond flour and stir until combined. Stir in the flour and baking powder until a firm dough is formed.

  4. Shape scant tablespoonfuls of dough into a ball. Lightly dredge in the powdered sugar, shaking off excess sugar. If desired, place it on a baking sheet and top it with an almond or maraschino cherry. Continue with the remaining dough.

  5. Bake for approximately 15 minutes until lightly browned underneath and the tops of the cookies are crackled. Cool on a rack before serving.

 

Notes

 

  • Almond flour may be substituted with finely ground blanched almonds.

  • The dough texture must be correct to get a cookie with a crisp exterior and a soft and chewy inside. The dough does not need to be too wet or gooey. These cookies require a firm dough to retain shape and have a soft inside.

  • Baking time may vary according to your oven. Checking on your cookies around the 12-minute mark is recommended to ensure they are not too done.

  • Italian Amaretto cookies can be frozen in a class airtight container for up to three months.
